I love smoothies! They’re my go-to breakfast where I try to pack in as many vitamins as possible! No matter what I have for lunch or dinner, I feel better knowing I covered a large part of my daily servings of fruits and veggies first thing in the morning.
One of my favourite smoothies is by nutritionist Kimberly Snyder. Her Glowing Green Smoothie is full of leafy greens, celery, apple, pear and banana, which is surprisingly tasty considering the 13 cups of greens! If you’re looking for something a little less green, give this berry smoothie a try. This recipe incorporates some veggies, while still having enough fruit to be on the sweeter side, making it a good transition smoothie as you develop a taste for greens.
Berry Green Smoothie
A handful or two of greens (any combo of salad greens, spinach, romaine, swiss chard or kale) *see Tip
1 stalk of celery
4 inches of cucumber
1 cup frozen blueberries
1/2 cup frozen cherries
1 cup water (add more if you like less thick)
3 tbsp creamy coconut milk
Add all ingredients to a blender, and blend until smooth. Top with chia seeds or hemp hearts for a boost of omega fatty acids! Enjoy!
*Tip: Most greens will work in a smoothie, but I would recommend leaving out the arugula. It’s spicy flavour will leave your smoothie tasting peppery! If you’re new to green smoothies, try mixing a milder tasting lettuce such as romaine or salad greens with a bolder flavoured leafy green like spinach or kale.
Tip: I like to make a large batch, and store leftovers in mason jars (canning jars) in the fridge. They’ll keep a few days and make a quick and easy breakfast or snack on the go!
